Protein Black Bean and Lentil Soup
Ingredients
  • 1 tablespoon extra-virgin olive oil
  • 2 cloves garlic, minced
  • 1 sweet or yellow onion, diced
  • 2 carrots, peeled and finely diced
  • 1 (14.5 ounce) can diced tomatoes
  • 1 cup dried lentils
  • 1 (15 ounce) can black beans, drained and rinsed
  • 1 teaspoon chili powder
  • ½ teaspoon cumin
  • ½ teaspoon black pepper
  • ½ teaspoon Kosher or sea salt, more or less to taste
  • ½ teaspoon crushed red pepper flakes
  • 4 cups vegetable broth
