Pistachio-Mint Pesto
Ingredients
  • ½ cup packed fresh mint leaves
  • ½ cup packed fresh spinach
  • 2 garlic cloves
  • ⅓ cup shelled unsalted pistachios
  • ¾ cup olive oil
  • 1 tsp sea salt
Steps
  1. Combine all pesto ingredients in high-speed blender or food processor and blend until well combined.
Notes
  • Serve over lamb or pasta or salad
