Ingredients
  • 150 g dry cashews and after soaking
  • note: 220g soaked so that's like 35% increase in weight and volume which means they're just going to be all smooth and buttery
  •  
  • 90 g Shallot(s) , (2 medium shallots) thinly sliced
  • 50 g Button mushrooms , cleaned and thinly sliced
  • 12 g Garlic clove(s) , (2 cloves) thinly sliced
  • 110 g Cognac , or brandy
  • 275 g Water , plus extra for soaking cashews
  • 25 g White miso paste
  • 15 g Tomato paste
  • 8 g Kosher salt
  • 2.5 g Sweet Spice , (1 teaspoon)
  • 1.5 g Black pepper , freshly ground
  • 1.5 g Low-Acyl Gellan Gum F
  • 0.4 g High-Acyl Gellan Gum LT100
  • Vegan shortening , for fat cap (optional) , as needed
