Easy Tofu Ground Beef
Ingredients
  • 14 to 16 ounces extra-firm tofu
  • ¼ cup reduced sodium soy sauce or tamari
  • ¼ cup rice vinegar
  • 2 teaspoons toasted sesame oil or sesame oil
  • 2 teaspoons hot sauce (optional)
  • 1 tablespoon plus 1 teaspoon maple syrup
  • 2 teaspoons minced ginger or ¼ teaspoon ground ginger
  • ½ teaspoon ground white pepper or black pepper
  • 2 teaspoons cornstarch dissolved in 1 tablespoon water (optional)
  • ½ cup chopped scallions

  • 4 cups cooked rice
  • 2 cup shelled edamame thawed
  • 1 large cucumber chopped
  • Chili crisp sauce or garlic chili oil to taste
  • Toasted sesame seeds for garnish
  • Nori seaweed sheets
