Pressure Cooker Lemon and Ginger Risotto
Ingredients
  • 2.5 cups vegetable stock
  • 1 tablespoon olive oil
  • 1 medium vidalia onion (or sweet onion), diced (about 1 ½ cups)
  • 1 tablespoon plus 2 teaspoons grated ginger
  • 1 ½ cups Arborio rice
  • ½ cup dry white wine (I recommend chardonnay)
  • 2 tablespoons unsalted butter or margarine
  • ½ cup freshly grated Parmesan cheese
  • juice of one lemon
  • 1 to 2 tablespoons fresh flat-leaf Italian parsley, minced
  • Salt and freshly cracked pepper to taste
