You can make this in advance (it's best to sit and merry together for at least 2 hours in the fridge), so it's a great recipe to make ahead for company, family gathering, or for meal prep.

A great thing about this side dish is that you can add all kinds of salad ingredients depending on what you like. Try olive oil with red wine vinegar, red bell pepper, some dried oregano or Italian herbs, kalamata olives, fresh dill, or even add in greek salad dressing.
Ingredients
  • 2-15 oz cans garbanzo beans, drained
  • 2 cucumbers, halved lengthwise and sliced
  • 12 cherry tomatoes, halved
  • ½ medium red onion, chopped
  • 2 cloves garlic, minced
  • 6 oz can black olives, drained and chopped
  • 2 oz crumbled feta cheese
  • ½ cup Italian-style salad dressing
  • ½ lemon, juiced
  • 1 tso garlic salt
  • ½ tsp pepper
