Perfectly Light and Golden Fish Cakes
Ingredients
  • 1kg potatoes, peeled and chopped
  • 1kg mix of salmon and white fish fillets (You can save money by buying frozen fish and defrosting it before use)
  • 1 lemon, zest and juice
  • 1 bunch each dill, chives, parsley and spring onions, chopped
  • 4 tablespoons tartar sauce, plus extra to serve if you like
  • 3 eggs, beaten
  • 100g plain flour
  • 300g breadcrumbs
  • 2 tablespoons olive oil
