- Cozy Vegan Tourtiere
- I’m so happy to team up with @love.legrand to bring you a twist on this cozy, French-Canadian savoury pie.
- This recipe features one of my favourite products they carry: vegan butter (both salted and unsalted)! It makes for the flakiest crust and a rich, savoury filling.
- Here’s what you’ll need:
- 50g dried wild mushrooms, hydrated
- 19oz lentils, cooked (1 can)
- 3 tbsp @love.legrand salted butter
- 6 cloves garlic
- 1 onion, chopped
- 2 carrot, chopped
- 3 small potatoes, chopped
- 1 medium beet, grated
- ¼ cup veggie stock
- 1 cup hydrated TVP (or sub 1 cup nuts, pulsed into coarse crumb)
- ¼ cup olive oil
- ¼ cup tamari
- ¼ cup water
- ⅛cup balsamic vinegar
- 2 tbsp rosemary, fresh & chopped
- salt + pepper, to taste
- Pulse hydrated mushrooms in a food processor.
- Cook garlic, onions, carrots & beet in @love.legrand salted butter. Add ¼ cup veggie stock and cook until moisture has been absorbed and veggies are nearly done.
