KETO-FRIENDLY SEED & SPICE BREAD

Ingredients
  • 3 ½ C (420g) King Arthur Keto Wheat Flour Blend
  • ¼ C (60g) The Works Bread Topping
  • 1 ⅓ C (341g) lukewarm water
  • 1 TBS Better Cheddar Cheese Powder or, Vermont Cheddar Cheese Powder
  • 1 ½ tsp SAF Instant Yeast
  • ¼ tsp salt
  • 2 TBS (28g) butter, softened
  •  
  • TOPPING
  • 1 TBS The Works Bread Topping
Steps
  1. In a large bowl, combine all ingredients and mix and knead to make a smooth, bouncy dough, about 5 mins using a stand mixer with dough hook on low speed, 7 mins by hand.
  2. Cover dough and let rise in bowl for 15 mins.
  3. Shape into a 9" log and place into a greased 9"x5" pan.
  4. Cover and let rise for 1 ½ to 2 hours, until the loaf rises about 1" above rim of pan.
  5. Toward end of 2nd rise, preheat oven to 350F.
  6. When ready to bake, uncover bread, brush top with water, and sprinkle with remaining 1 TBS of bread topping.
  7. Bake for 30 to 35 mins, until golden and center reads 190F on digital thermometer.
  8. Remove from oven and tip out bread onto a rack to cool completely before slicing.
