Cornbread stuffing (vegan) (oil-free)

Ingredients
  • 4 cups Cornbread (vegan) (oil-free) , cubed and dried
  • 1 cup small dice celery
  • 1 cup small dice apple
  • ½ cup fresh or frozen cranberries
  • 1 tsp thyme
  • 1 tsp poultry seasoning
  • ½ tsp salt
  • ½ tsp black pepper
  • 1 ⅓ cup oil free vegetable broth + more for saute
  • ¼ cup chopped walnuts
Steps
  1. Saute celery, apples and cranberry in some veg broth until soft
  2. Add thyme, poultry seasoning, salt, pepper, broth and walnuts and mix until all the bread is covered with broth
  3. Put mixture in a baking dish (use silicone dish for non stick or line with parchment to keep dish oil free) and bake covered for 30 minutes at 400F
  4. Now ready to use as stuffing
  5. If you are going to serve this as dressing, remove cover and bake an additional 15 minutes or more to until the top begins to brown
