Cornbread (vegan) (oil-free)

Ingredients
  • 2 cups whole wheat pastry flour
  • 1 cup yellow cornmeal
  • 2 tbs sugar
  • 2 tsp baking powder
  • 1 tsp salt
  •  
  • 1.5 cups plant milk or water
  • 2 tbs apple cider vinegar
Steps
  1. Preheat oven to 375F
  2. Place flour, cornmeal, sugar, baking powder and salt in a large bowl and whisk together
  3. Mix water and vinegar and add to dry ingredients
  4. Mix well. It will be a very thick dough
  5. Spread in a 9" round silicone pan
  6. Bake at 375F for 45 minutes or until it begins to brown
  7. Allow to cool for 15 minutes then slice and serve
