  • This spicy Middle Eastern Chkn dish is such a great thing to eat! Shawarma is traditionally made by skewering marinated cuts of meat onto a rotisserie or spit and slowly cooking the meat as it rotates. I have devised this recipe to give the same kind of finished product but without using the same cooking approach as I felt too many of you wouldn't have a spit or rotisserie - however, if you are lucky enough to have these then by all means cook the marinated pieces in the traditional way. For this recipe though I'll be using the Ooni Dual-Sided Grizzler Plate

  • 6 x 10K Chkn Breast Portions
  • 24g Fresh Garlic
  • 24g Fresh Ginger
  • 6T Extra Virgin Olive Oil
  • 2T Ground Coriander
  • 1T Ground Cumin
  • 1T Ground Green Cardamom
  • 4tsp Fine Sea Salt
  • 3tsp Smoked paprika
  • 2tsp Cayenne Pepper
  • 1tsp Dried Parsley
  • 40 turns of black pepper
  • Juice and Zest of one Lemon
