Sloppy Joe's (Plant-based)
Ingredients
  • ½ yellow onion, diced finely
  • ½ green bell pepper, seeded and finely diced
  • 3 cloves garlic, minced
  • 2½ cups cooked lentils (or package steamed lentils, 1 lb. 1.6 oz)
  • ½ cup water (or more if desired)
  • 1 tbsp tomato paste
  • ⅔ cup ketchup
  • 1 tsp prepared mustard
  • ¾ tsp worcestershire sauce (vegan)
  • ¾ tsp chili powder (optional)
  • ¼ tsp red pepper flakes (or more if desired)
  • ¼ tsp black pepper
  • dash of hot sauce
  • ½ tsp salt (optional)
  • 4 to 6 whole grain rolls/ buns (or lettuce leaves)
  • Optional topping: avocado, jalapeño, or shredded cabbage
