Sloppy Joe's (Plant-based)

Ingredients
  • ½ yellow onion, diced finely
  • ½ green bell pepper, seeded and finely diced
  • 3 cloves garlic, minced
  • 2½ cups cooked lentils (or package steamed lentils, 1 lb. 1.6 oz)
  • ½ cup water (or more if desired)
  • 1 tbsp tomato paste
  • ⅔ cup ketchup
  • 1 tsp prepared mustard
  • ¾ tsp worcestershire sauce (vegan)
  • ¾ tsp chili powder (optional)
  • ¼ tsp red pepper flakes (or more if desired)
  • ¼ tsp black pepper
  • dash of hot sauce
  • ½ tsp salt (optional)
  • 4 to 6 whole grain rolls/ buns (or lettuce leaves)
  • Optional topping: avocado, jalapeño, or shredded cabbage
Steps
  1. Place a medium saucepan over medium heat. Once hot, add onions and pepper stirring for 5 to 7 minutes, adding 1 tablespoon of water at a time as needed to keep from sticking. Then add the minced garlic and cook one more minute. Stir in the cooked lentils, tomato paste, ketchup, mustard, worcestershire sauce, chili powder, red pepper flakes, black pepper and hot sauce, Stir the mixture together water to the desired thickness taste, adjust seasonings as needed and add salt if desired. Return the pan to the stove, reduce heat and simmer gently for 10 minutes, stirring occasionally. Divide the filling between the buns (or lettuce) and serve hot.
