AKA Chia Flax Hot Pudding
Basically, it’s like making cream of wheat or oatmeal - without the grains. Today I made is with berries and coconut milk. AKA Warm Pecan Butter Super Seed Breakfast

Ingredients

  • 1 Tbsp liquid coconut oil
  • 1½ [2] cups coconut or almond milk, divided
  • 3 tablespoons black chia seeds
  • 3 tablespoons flaxseed meal
  • One serving vanilla plant protein
  • Optional toppings,
  • 4 tablespoons chopped pecans, raw and unsalted
  • 2 tablespoons hemp seed hearts
  • ¼ cup mixed berries

  • 1 Tbsp Coconut oil*
  • 2 C coconut milk or almond milk
  • 1 serving vanilla collagen protein (20g)
  • 3 Tbsp hemp hearts
  • 1 Tbsp white chia
  • 1 Tbsp flax seed
  • note: or just 2 Tbsp Flax Meal Chia Blend*
  • 1 Tbsp nut butter*
  • one shake of Ceylon Cinnamon*
  • Optional Toppings: berries
Steps
  1. In a medium ceramic fry pan on medium heat, add one tablespoon of coconut oil, 1 cup of coconut/almond milk, the chia seeds and flax seed meal. Whisk all ingredients together until pudding is thick, about 3 minutes.
  2. Remove from heat and whisk in remaining 1 cup of milk and protein powder.
  3. Pour pudding into a bowl and stir and sweetener of choice if desired. Top with nuts, hemp seeds, and berries. Serve warm and enjoy.

  5. Preheat a non-stick pan on medium heat.
  6. Add the coconut oil to your preheated pan. Once melted, add your non-dairy milk, and then your protein powder. Whisk to combine.
  7. Add the hemp hearts and the chia seeds (or chia blend), and whisk until thick.
  8. Once it gets big-bubbly, add in your nut butter and stir with a fork or whisk. Then add a shake of Ceylon Cinnamon.
  9. Scrape it all into a bowl and enjoy! If you want to top it with some fresh fruit, just make sure to keep to a ¼ cup maximum.
