Easy Paleo & Whole30 Pot Roast (Slow Cooker Recipe)
Ingredients
  • 3 to 4 pound grass-fed boneless chuck roast- well marbled with fat
  • 2 teaspoons sea salt
  • 1 teaspoon black pepper
  • 2 tablespoons ghee, grass-fed butter or tallow
  • 1 pound carrots, peeled and cut into 2” chunks
  • 1 medium yellow onion, sliced
  • 1 pound baby gold potatoes
  • 3 to 5 stalks celery, cut into 2” pieces
  • 1 tablespoon dried thyme
  • 3 garlic cloves, minced
  • ½ tablespoon sea salt
  • 2 cups beef broth
  • subheading: For gravy (optional) :
  • 2 tablespoons tapioca starch or arrowroot starch
  • 3 tablespoons beef broth
