Korean Style Riblets by Rich Lum
Ingredients
  • ½ cup brown sugar
  • ¾ cup soy sauce
  • ¼ cup water
  • 1 tablespoon toasted sesame oil
  • 4 cloves garlic pressed
  • 1 tablespoon minced ginger
  • ¼ teaspoon crushed red peppers
  • 3 pounds pork riblets
  • 2 Tablespoons vegetable oil
  • 2 tablespoons corn starch mixed with 2 tablespoons water
  • diced green onions for garnish
  • sesame seeds for garnish
Steps
  1. Add the first 7 ingredients to your pot. Stir until the brown sugar is completely dissolved
  2. *In a skillet over medium high heat add the vegetable oil
  3. *Add the riblets...brown on all sides
  4. *When the riblets have been browned add them to the pot. Stir to coat each riblet
  5. Close and seal your lid
  6. Set your pot to manual or pressure cook 30 minutes. Allow a 10 minute npr
  7. Open your pot and set it sauté. When the liquid begins to bubble add the cornstarch slurry a little at a time. Stir until thickened
