Ingredients
  • 4cm piece of fresh root ginger
  • 4 garlic cloves
  • 1 tbsp malt vinegar
  • ½ tsp Kashmiri chilli powder or mild paprika
  • ¼ tsp garam masala
  • ½ tsp ground cumin
  • 1 tsp Greek yoghurt
  • 400g boned leg of lamb, diced into bite-sized pieces
  • 2 tbsp vegetable oil
  • salt to taste

  • 2 green bird’s eye chillies, finely chopped
  • 30ml malt vinegar
  • 1 red onion (about 100g), thinly sliced
  • juice of ½ lemon
  • 4 frozen parathas
  • 2 eggs, lightly beaten
  • Mint and Coriander Chutney (see below)
  • subheading: For the Mint & Coriander Chutney:
  • 40g cashew nuts
  • 20g fresh coriander leaves
  • 40g fresh mint leaves
  • 1.3cm piece of fresh ginger chopped
  • 1 small bird’s eye chilli
  • 1 tsp sugar
  • juice of 1 lime
  • salt to taste
