Pulled Pork - Instant Pot
Ingredients
  • 8lb Boston Butt - Cut up into more manageable pieces
  • Salt
  • Pepper
  • Garlic powder
  • Paprika
  • Onion powder
  • Cumin
  • Brown sugar
Steps
  1. Season with salt, pepper, garlic powder, paprika, onion powder, cumin, and a little brown sugar.
  2. Cover the meat with the dry rub & seared in batches in the IP.
  3. Deglaze the bottom of the pot with chicken stock, added additional water, probably a cup or so.
  4. Put seared pieces back in the pot & cooked for 120 min. Let natural release while I was doing other things so prob 45 min then QR the rest.
Notes
  • Made a TON of shredded pork! 4 glass pie pans full!
  • Used part to make pulled pork sliders tonight... added bbq sauce & slowly reheated in a skillet & served on fresh baked slider rolls.
  • Will divide up the rest & freeze for different meals later!
