Grilled Chicken Margherita
Ingredients
  • 4 (8 oz. each) boneless skinless chicken breasts, pounded to an even thickness about ½-inch
  • ¼ cup white balsamic vinegar*
  • ¼ cup olive oil
  • 1 tsp minced garlic
  • ¾ tsp dried oregano
  • 1 tsp salt
  • 1 tsp ground black pepper
  • 6 oz. fresh mozzarella, cut into 8 slices
  • 1 cup grape tomatoes, halved or sliced, or 2 small roma tomatoes, sliced

  • 1 ½ cup packed (32g) fresh basil leaves
  • ¼ cup (35g) finely shredded parmesan cheese
  • 2 Tbsp pine nuts (toasted or raw)
  • 1 tsp minced garlic
  • ¼ cup extra virgin olive oil
