This big, bold and easy chicken marinade recipe was adapted from a local Vermont restaurant and caterer. We make it in huge batches and freeze the extra so we always have it on hand to use with chicken thighs, breasts and drumsticks. Also try it with salmon, duck, pork, beef or lamb.
Grandma's Lasagna

Susie's recipe calls for preserved lemon and black garlic which can be hard for people to find. Please don't let that stop you from making your own version with what you have on hand. Grated fresh lemon peel and garlic can both work. Use a smaller quantity of fresh garlic and temper it for a moment or two in lemon juice. You may need to add a bit more oil or a grating of cheese for balance, but trust yourself and taste as you go, and you will find your perfect sauce.

This was one of the first dishes on the menu when we opened, and it is still a family favorite at home. These vegetables were typically served in a loose broth under stuffed calamari, but they are great on their own or with simply grilled calamari or octopus, and delicious with sauteed or grilled shrimp.
