Trinidadian stew chicken is quite unique from stews around the world. There are many variations, but in my simple recipe, pieces of chicken are first browned in a modest amount of "burnt" sugar and the flavor is enhanced with fresh herbs, garlic, tomato, a touch of ginger and pimento, habanero or other hot pepper. Stew chicken is one of my favorite chicken recipes. I always say, “you know you are a Trini (a Trinidadian) if you don’t know what to cook and you decide to make either stewed chicken or curried chicken”. In my opinion, there is no chicken recipe anywhere that can produce such a complex and satisfying experience with the minimum effort required of this recipe.

6 chinese celery or a handful
cut stem off, and cut celery into 3'" length. wash in salt water. rinse and drain and season/pickle with 1 tsp of salt
handful of cloud ears. soak in a bowl of water and a spoonful of flour . let soak for 20 mins.
2 eggs - beat in to a liquid - set aside
2 red chilli
2 green chilli
slice and set aside
4 L cloves garlic
6 slices of ginger
chop and set aside
SAUCE
IN BOWL ADD A TSP OF SALT , TSP OF B PEPPER, 1/2 TSP CHICKEN POWDER, TBSP OF SOY SAUCE, 1/2 TSP SUGAR, TSP OF CORNSTARCH, ABOUT 1/4 CUP WATER. MIX TOGETHER AND SET ASIDE
MEANWHILE WASH AND BLANCH THE WOOD EARS IN SALTED WATER
TO. CUT INTO SMALLER PIECES IF TOO LARGE.
RINSE SALT OFF THE CELERY . DRAIN.
TO COOK - IN WOK ADD 2 TBSP OIL AND FRY EGGS AND SCRAMBLE INTO CHUNKS. SET ASIDE
ADD SOME MORE OIL TO POT AND STIR FRY THE GARLIC AND GINGER UNTIL FRAGRANT.
ADD IN THE CELERY, STIR FRY NOT TOO LONG, THEN THE WOOD EARS. ADD ALL THE EGGS AND PEPPERS
ON HIGH HEAT. FINALLY STIR IN THE SAUCE.
