Roast chicken, cauliflower, sweet peppers and cherry tomatoes all on the same sheet pan for a super-delish dinner with minimal clean-up. Nice Greek herb flavors.
We found that taking the chicken strips out at between 15 & 18 minutes and then letting the vegetables continue cooking for 20+ minutes worked best for our oven. We also served the dish with fresh lemon quarters at the table.
Authentic Greek salad, also known as Horiatiki or Greek village salad is made with cucumber, tomatoes, green pepper, red onion, Kalamata olives, feta, thyme, olive oil and vinegar. As good as a caprese salad.
Cook's Note: use a relatively wide cooking vessel for the braise. An 11- or 12-inch saute pan with high, straight sides is the best tool for the job, but a large Dutch oven will also work. The increased surface area of these pans means the cooking liquid will come to a boil faster and more of the meat and vegetables will make contact with the hot liquid, which decreases the total cooking time.

Note: when out of zucchini, I have substituted chopped onions and celery ... works fine. Also, we use the 10 oz. Aldi's Casa Mamita Original Diced Tomatoes with Green Chilis.

Cucumber Salad is called Gurkensalat in German and is made with sour cream, vinegar and fresh dill. Like most German salads, this one tastes best after it has chilled for a few hours in the fridge. You can make it up to one day in advance.

To make this casserole low carb, we eliminate the bread crumbs and double up on the Parmesan cheese. And we prefer Italian sausage to chicken.
