Not dairy-free, and contain sugar. You can use mason jars or a muffin tin to make this recipe! The jars need no prep, but if using a muffin pan, line it with muffin papers.
I love a good loaded salad and this mango chopped salad is the one that I like to make a lot of at once because it doesn’t wilt or get mushy with hardy cabbage as the base. The hardest part is all the chopping you have to do, but it’s totally worth it, I promise. It also helps to maximize the flavors by being able to taste all the wonderful components in one bite, and it’s just easier to eat. To make this a complete meal, I also add some chopped up rotisserie chicken, which is my favorite shortcut to take when I’m having a busy week. And now the dressing is just so bright and wonderful with mango, cilantro, avocado, and lime juice blended together. Pour it over the salad and toss together to coat evenly. For a little bit of crunch I like to add cashews, but you can use any other nuts or seeds you like and then enjoy. It’s so delicious and it just screams summer which makes me so happy.
