I haven't been able to make this without the tortillas becoming chewy/mushy and hard to cut in the middle of the casserole. So I changed it up a bit...
I do not include the tortillas in the recipe.
Instead of lentil taco meat (which is fine, btw), I make a ground beef substitute with soy curls, walnuts, and mushrooms. That's just my preference.
I use two cans of beans and 2 cups of corn.
It becomes more of a thick "dip", but it is hella good! Thanks for sharing...it's been one of my favorites since you posted it to your blog a while back. I just made my revised version this weekend. For two people, it'll last for 3-4 nights!
