I just got back from a trip to Connecticut where I tried this deliciously moist cake for the first time. I am very fortunate to have a friend who was willing to share this recipe. Then again, maybe she is trying to sabotage my perpetual diet because I find myself grabbing a piece throughout the day. I’ve discovered it’s not too sweet, making it perfect for breakfast, afternoon tea, and of course, as a late night snack. Best of all, it can be whipped up in less than half an hour, excluding baking time.
