With active yeast, they do rise fairly well but of course, not as much as regular gluten bread. As with all keto bread, these cinnamon rolls are also dense but they are fairly soft and so full of flavors. This recipe is quite challenging as it took me quite some time to get it.

From the time I posted my first chaffle video on YouTube (and ever since), I’ve gotten viewer comments saying things like “I hate eggs” or “I can’t get past that eggy taste” or “can you make a chaffle that doesn’t taste like eggs?”.
The answer is “yes” — with my “egg buster” batter. First, we remove the yolk. To make up for the lack of volume, we use two egg whites. Then we have a few ingredients that (in my experience) neutralize the flavor of eggs: psyllium husk powder, nutritional yeast, and stevia. The stevia is optional — it’s not there to sweeten the chaffle, but it does further cut down on any eggy flavor.
This chaffle also has a great texture and is hearty enough to use as a sandwich bread or hamburger bun.

A Not So Traditional Pancake Batter
This pancake batter will likely be different than what your used to. No milk, no butter. Why use milk and butter when we can use their coconut derived counterparts? Coconut milk(full fat) and coconut oil! Oh, and in place of the all-purpose flour? You guessed it… coconut flour! Now all of these substitutions are critical for jamming the absolute maximum amount of coconut flavor into these low carb coconut pancakes. The resulting batter will be thicker than a standard pancake batter. This batter does not pour easily into the pan. You will have to spoon it out and spread it around in the pan to flatten it out. Don’t worry though! It cooks up nice and fluffy. As a matter of fact, these pancakes are among the fluffiest low carb pancakes we’ve made to date!
