1. Heat 1tsp. of oil in a skillet over med. heat until shimmering.
2. Add 10 oz. of sliced shiitake mushrooms and 1/4 tsp salt, cover , and cook until the mushrooms have released their liquid, 4 to 6 mins.
3. Uncover and increase heat to med-high.
4. Stir in 1/8 tsp each of smoked paprika, chili powder, and pepper. Cook until mushrooms are golden, 4-6 minutes.
