Pernil
Needs to be marinated the night before. You need to rinse it while in the sink, stab holes into it as far down & as many as possible. On the side, take cloves of garlic chop, smash, add lots of salt till it almost makes a paste. Now add olive oil, water, adobo, garlic powder, oregano, cilantro, and basil mix all together. Place the pernil in pan rub marinade all over making sure to get garlic & spices into the holes. After completely marinating cover with aluminum foil add a small slit at each corner of the foiled pan. Put in the fridge over night & leave until the next morning. Next morning depending on dinner time calculate 8 hours of cook time 4 hour with foil & 4 without.
