There's a Vegan restaurant in Cincinnati (Rooted Juicery) that makes these nachos. This is my version. Very nice version with walnuts (Omega 3s), Organic Chips and Organic Beans and a light cashew cheese (more of a crema).
This was originally a FOK recipe that I adapted. Didn't like the lack of spice in it so instead of cooking the rice in water (as the FOK recipe suggested), I used Organic Veggie Broth and Miso Paste to cook the rice in.
Originally a recipe from Allrecipes modified. Couldn't find a recipe that actually had all the different flavors that I've read go into various authentic jerk recipes. This one is the best. If you want authentic, use the hotter peppers. If you want the American tamed down version, use the jalapenos.
Great Clean Seafood Recipe from Blue Apron. Chinese Five Spice is an amazingly healthy spice with typically no fillers. Cloves and Star Anise are healthy powerhouses! Add in Ginger, Cilantro, Bok Choy and Coconut and it's a very healthy meal!
