The size and quality of the rice matters in this classic pudding: A medium-grain rice is starchy enough to thicken it, but it won’t soften so much that it completely disintegrates. Using a 2-quart saucepan is also important. If the pan is larger or wider, the liquid will evaporate faster than the rice cooks. For an extra-rich dessert, elevate it by adding some rum-soaked raisins.

Consider this marinade a starting point and feel free to use other fresh herbs, such as rosemary, sage or oregano, or add a pinch of your favorite seasoning blend. Pork tenderloins are often sold in packages of two, but you can easily cut this recipe in half; in that case, roast the single tenderloin in the same skillet used to brown it. If your tenderloins weigh less than 1 pound each, you may need to reduce roasting time slightly — begin checking for doneness after 15 minutes.
To make it more filling, add peas, asparagus or spinach in the last few minutes of the pasta boiling, or stir in fresh arugula or watercress with the sauce in Step 3. It’s a weeknight and for-company keeper any way you stir it.
Great starting point recipe, and made it a few times now. Favorite additions:
1. 2 tbsp of leftover homemade pesto stirred into the ricotta;
2. Sprinkle toasted panko or lightly toasted pine nuts on at the end; and/or
3. Preheat oven to 425/400 convection. Take 2 broccoli crowns, chop into florets; toss them in a light drizzle of olive oil, sprinkle S&P, garlic powder or garlic. Roast on sheet pan for 10-12 min or until done (while pasta boils) with some tasty brown bits. Toss into pasta.
