We know, we know, cheese in a should-be sweet morning bun sounds wrong. But trust us, it really works. And no, you cannot taste the cheese! We only put cheese in this recipe (and some other sweet keto concoctions) because keto desserts can be tough since you can't use flour. We love almond flour, but unlike traditional wheat flours, it never develops any gluten. Gluten development helps create airy dough that's chewy in just the right way.
Stretchy mozzarella helps add some of the fluffy chew so that they're not totally crumbly. The end result is a sinfully delicious and cinnamony roll that has no business being keto.

These cookies taste like a cheesecake in cookie form. It gives you the tangy, richness you expect all packed into a handheld snack. The thing that really amps up these cookies is the addition of lemon. Lemon is blueberry's best friend especially when you use both the zest and the juice. Gebruik het liefst vers sap voor de lekkerste smaak. Eventueel kun je nog wat rasp toevoegen of de sinaasappel (deels) vervangen door bijvoorbeeld citroen.
Ganache is een mengsel van chocolade en een vloeistof. Meestal is die vloeistof (slag)room, maar er kan bijvoorbeeld ook vruchtenpuree of vruchtensap gebruikt worden. Ganache wordt veel gebruikt als vulling voor bonbons en truffels (zoals bijvoorbeeld deze chocolade truffels), als taartvulling, als topping op een taart of als onderdeel van een dessert. Een goede ganache is rijk van smaak en heerlijk romig en zacht van structuur.
Chocolade crémeux is een waanzinnig lekkere vulling en absoluut onmisbare klassieker in de patisserie. Het is eigenlijk net als een banketbakkersroom maar dan met pure chocolade erin. Het is dus een dikke maar fluweelzachte crème met heel veel chocolade erin. In banketbakkersroom wordt maïzena meegekookt voor extra binding en zit weer meer suiker. Omdat in een chocolade crémeux vanuit de chocolade zelf al extra suiker zit hoef je dit dus ook minder toe te voegen. Verder zorgt de chocolade tijdens het afkoelen ook voor meer stand. Gebruik het liefst een pure chocolade met een hoog percentage cacaobestanddelen, ik kies hiervoor zelf altijd 70%. Dit geeft een heerlijk intense chocoladesmaak en zorgt voor net wat meer stand in de chocolade crémeux. De crémeux kun je gebruiken als vulling voor de lekkerste millefeuilles, éclairs of soezen. Maar je kunt het ook als element gebruiken in een chique dessert of gewoon een klassieke banketbakkersroom erdoor vervangen.
