Garlic Butter Chicken Thighs with Baby Potatoes Skillet
Ingredients
  • 3 to 6 skinless, boneless chicken thighs
  • 1 ½ lb (650g) baby yellow potatoes, quartered
  • 1 tablespoon olive oil
  • 3 tablespoons unsalted butter, divided (or ghee for paleo diet)
  • 4 garlic cloves, minced
  • 1 teaspoon paprika
  • 1 teaspoon onion powder
  • 1 teaspoon Italian seasoning
  • Salt and fresh cracked pepper
  • Juice of ½ lemon
  • ¼ cup (60ml) chicken stock
  • 1 tablespoon hot sauce (we used Sriracha)
  • Crushed red chili pepper flakes, optional
  • ½ cup fresh chopped parsley
