Chocolate white chocolate chip cookies
"So simple and easy even a child can do it?" Yes, please!!!

I'm not a huge lover of chocolate but every once in a full blue moon, I crave a taste of a brownie. Problem is: I never eat the whole brownie and sometimes they are too dense. This is a great alternative to a brownie that's not too big or dense, but has the right amount of thickness and chewiness. Even I couldn't just stop at one!

Ingredients
  • 1 cup ( sticks) of unsalted butter, room temperature
  • ¾ cup Granulated Sugar
  • ⅔ cup packed, light Brown Sugar
  • 2 Large Eggs, room temperature
  • 1 teaspoon Vanilla Extract
  • 2 ¼ cups All-Purpose Flour
  • ⅔ cup Unsweetened Cocoa Powder
  • 1 teaspoon Baking Soda
  • 2 teaspoons of espresso powder*
  • ½ teaspoon Salt
  • About 1 cup (8 oz) White Chocolate Chips**
Steps
  1. Preheat oven to 350 degrees F. Line a cookie baking sheet pan with parchment paper (if you have any) and set aside.
  2. Cream softened butter, sugar and brown sugar in a mixing bowl. Beat for about 2 to 3 minutes on medium speed.
  3. Mix in the Eggs and Vanilla until light and fluffy.
  4. Add Cocoa Powder, espresso powder, baking soda and salt and mix thoroughly.
  5. Finally, mix in the flour, one cup at a time. Beat on low speed until cookie batter comes together. Batter will be thick.
  6. Add in White Chocolate Chips and mix.
  7. For best results, refrigerate dough for 30 minutes to an hour before baking.
  8. Scoop out dough with a small ice cream scoop or tablespoon and roll cookie dough into balls. Place on baking sheet about an inch apart from one another.
  9. Bake for 10 to 12 minutes, depending on how big your cookie dough balls are. (Mine took about 12 minutes)
  10. Pour out a tall, cold glass of milk and enjoy!
Notes
  • *Espresso really brings out the chocolate flavor in any chocolate based recipe!
  • **I personally only used 6 oz of white chocolate chip but if you REALLY like white chocolate, feel free to add a full 12 oz bag of them. You're welcome ;)
