“Vegan Sweet Potato Coconut Curry, with Chickpeas and Spinach!
Ingredients
  • 1 Small White Onion (or ½ large)
  • 400 to 500g Sweet potato
  • Couple large handfuls spinach, approx 125g
  • 1 tbsp Garam masala
  • 1 tsp Turmeric
  • 1 tsp Cumin
  • Pinch salt
  • 3 Garlic cloves
  • 6 to 8g Ginger
  • 1 tin chopped tomatoes, 400g
  • 1 tin coconut milk, 400ml (not ‘reduced fat’!)
  • 1 tin chickpeas, 400g, drained
  • ‍ Serves 4, and you’ll need to allow for either 4 or 8 hours cook time
