Shrimp Creole for Meal Prep
Ingredients
  • 1 tsp olive oil or avocado oil
  • 4 nitrate-free bacon slices, chopped
  • 3 bell peppers various colors, chopped
  • 1 large white or yellow onion, sliced
  • 4 celery ribs, chopped
  • 4 fresh garlic cloves, minced
  • 2 Tbsps homemade Cajun seasoning mix
  • 1 (14.5 ounce) jar organic tomato sauce
  • 1 lb. raw shrimp, peeled, deveined, tails on
  • sea salt and freshly ground black pepper, to taste
  • 2 Tbsps chopped fresh parsley leaves
  • 2 cups cooked brown rice or quinoa
