Sheet Pan Gnocchi with Sausage + Veggies
Ingredients
  • 8 oz mushrooms roughly chopped
  • 6 oz roughly chopped kale leaves about one bunch, after stripping ribs & stems
  • ½ medium yellow onion roughly chopped
  • 12 to 14 oz smoked sausage sliced into half moons
  • 16 to 18 oz gnocchi
  • 2 Tbsp butter
  • 2 Tbsp olive oil
  • 2 tsp minced garlic about 4 cloves
  • 1 tsp Italian seasoning
  • ½ tsp oregano
  • ¼ tsp crushed red pepper omit if sensitive to spice
  • Black pepper to taste
  • Sea salt to taste
  • ¼ cup shredded Parmesan
  • fresh squeezed lemon juice to taste
