Gluten-Free Fruit Cake (Christmas Cake)
Ingredients
  • 5 cups dried fruit of choice I like to use a mix of currants, raisins, dates, cranberries, apricots and candied ginger
  • 1 cup sparkling water plain or flavor of choice
  • 2 cups almond flour or almond meal
  • 2 cups gluten-free all-purpose flour
  • ¾ cup coconut sugar or granulated sugar of choice
  • ¼ cup ground flaxseed
  • 2 teaspoons mixed spice
  • 1 teaspoon baking powder
  • ½ teaspoon ground cinnamon
  •  
  • ½ teaspoon ground nutmeg
  • ¼ teaspoon salt
  • ½ cup refined coconut oil melted
  • ½ cup butter melted, use vegan butter or more coconut oil if needed
  • ½ cup orange juice plus ⅓ cup for drizzle (last step)
  • 1 teaspoon almond extract
  • 1 teaspoon vanilla extract
