Homemade Nutterbutters
Ingredients
  • 2 cups | 9 ounces all-purpose flour, such as Gold Medal, plus more for dusting
  • 6 tablespoons | 3 ounces unsalted butter, creamy and soft-about 68°F
  • ⅓ cup | 3 ounces creamy peanut butter, such as Skippy
  • 1 cup | 7 ounces sugar
  • ¼ teaspoon baking soda
  • ¼ teaspoon Diamond Crystal kosher salt
  • 2 large egg whites (¼ cup | 2¼ ounces)

  • 1 cup |peanut butter
  • 2 tablespoons of honey
  • 2 tablespoons butter
  • 1 and ¼ cup confectioners sugar (prepare for potential need for ⅓ cup more if consistency is too runny, depending on your peanut butter, it may be thinner)

  • Take one cookie and place the cut out filling on the flat (non stamped) side of the cookie, sandwich another cookie on top.
  • Cookies will keep for one week in a covered container
