01 bq/smoked BURNT ENDS By Mike Clancy

  1. Bring smoker 250. For a 2hr burnt end cook session
  2. WHEN BRISKET REACHES TENDERNESS REMOVE FROM HEAT
  3. SEPARATE THE POINT FROM THE FLAT. RE-WRAP THE FLAT IN FOIL WITH ALL THE JUICE THEN A COUPLE OF TOWELS THEN INTO THE COOLER FOR A REST
  4. THE POINT IS CUBED RE-SEASONED ADD AJU FROM COOKED BRISKET THEN PUT INTO A FOIL PAN AND BACK INTO THE SMOKER FOR TWO HOURS AT 250 WHILE THE FLAT RESTS
  5. PULL THE BURNT ENDS OFF AND ADD A BIT OF BBQ SAUCE TO COAT THEM
  6. MELT IN YOUR MOUTH GOODNESS.
  7. Please taste if seasoned right ... Too much or too little
