Southwestern Goulash with a Cornbread Topping
Ingredients

  • 2 teaspoons ground cumin
  • 1 teaspoon fine grind sea salt
  • 1 teaspoon smoked paprika
  • ½ teaspoon garlic powder
  • ½ teaspoons onion powder
  • ¼ teaspoon chipotle powder optional
  • subheading: Goulash Ingredients:
  • 1 lb ground beef
  • 1 medium onion about 1 ½ cups diced
  • 2 cups beef stock
  • 1½ cups corn frozen, fresh, or canned (drained)
  • 14.5 ounces fire roasted tomatoes
  • 8 ounces elbow macaroni about 2 cups
  • 1½ cups diced bell peppers 1 to 2 bell peppers or 6 to 8 mini peppers. I use assorted colors
  • ½ cup Mexican cheese blend
  • subheading: Cornbread Topping:
  • 1½ cups corn meal
  • ½ cup flour all purpose
  • ½ teaspoon fine grind sea salt
  • 2 teaspoons baking powder
  • 2 large eggs
  • ½ cup buttermilk
  • ¼ cup sugar
  • ½ cup melted butter I used salted butter, but either is fine.
  • ½ cup Mexican cheese blend optional
