Enchilada Casserole
Ingredients
  • 1 pound ground beef or shredded chicken
  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 can (15 ounces) black beans, drained and rinsed
  • 1 can (15 ounces) corn, drained
  • 1 can (10 ounces) enchilada sauce
  • 1 can (10 ounces) diced tomatoes with green chilies, drained
  • 2 teaspoons chili powder
  • 1 teaspoon cumin
  • Salt and black pepper to taste
  • 12 corn tortillas
  • 2 cups shredded cheese (cheddar, Monterey Jack, or a blend)
  • ΒΌ cup chopped fresh cilantro (optional, for garnish)
  • Sliced green onions and sour cream (optional, for serving)
