Earls Hunan Kung Pao
Ingredients
  • 1½ lb fresh Chinese egg noodles
  • 2 tbsp vegetable oil, divided
  • 2 bird's eye chilies, or to taste
  • 8 oz. diced chicken breast or thigh
  • ½ cup diced red onion
  • ½ cup diced red pepper
  • ½ cup diagonally cut carrots, sliced ⅛ inch thick
  • ½ cup diagonally cut celery, cut ¼-inch thick
  • 2 cups chopped yu choy, cut 1-inch thick
  • Hunan sauce, recipe below
  • ¼ cup roasted peanuts
