Easy Lightened Up Mexican Casserole

  • 1 lb Laura's Lean Ground Beef (96% lean)
  • 1 Small onion (finely chopped)
  • 2 cups Fat-free salsa
  • 3 cloves Garlic (minced)
  • 1 can Low-sodium black beans (15-ounce can, drained, rinsed)
  • 2 cups Frozen corn kernels (thawed)
  • 1 can Chopped green chiles (4-ounce can)
  • 1 can Low-sodium red enchilada sauce (10-ounce can)
  • 1 tbsp Low-sodium taco seasoning
  • 10 Small white corn tortillas
  • ½ cup Reduced-fat cheddar cheese
  • Black olives, cilantro, red peppers, diced tomatoes, green onions, avocado, fat-free sour cream (for garnish, optional)
