Nice BBQ flavor, Fork Tender Country Ribs
Ingredients
  • 3 to 4 pds. Country style ribs either bone in or boneless
  • Veg. oil
  • 2 t sugar
  • ¼ to ½ t dry mustard
  • ⅛ to ¼ t pepper
  • ½ t salt
  • 1 t smoked paprika (or plain)
  • 3 T vinegar
  • 6 T catsup
  • 1 T Worcestershire Sauce
  • Sweet Baby Ray BBQ Sauce added to make ¾,s to 1 cup sauce
  • 1 to 2 T cornstarch
Steps
  1. Cut the ribs in smaller lengths. Remove excess fat. Sprinkle generously with salt, pepper, garlic salt, and any other spices of your choice. Let sit while making the sauce.
  2. In the IP, on med. saute, brown ribs several minutes on all sides. Do this in batches so as not to overcrowd the pan. Remove all the ribs. Turn off saute. Add a bit of vinegar to whisk to get all the brown bits off the bottom. Add the sauce ingredients. Whisk, then add back the ribs, turning in the sauce.
  3. Cook on manual for 20 mins. Let pressure fall for at least 10 mins.
  4. Remove from pan.
  5. Whisk cornstarch and a approx. ¼ cup sauce together. Then add back to sauce and saute on med for several minutes until thickened.
