Spinach Tomato Pesto Puff Pastry Pockets
Don’t overdue the fillings especially the cheese. Use a glass or nonstick pan and don’t use foil. The pastry will just stick to it.

  • ¼ cup pesto
  • 1 cup spinach, cooked
  • 2 roma tomatoes, sliced
  • ½ cup shredded mozzarella cheese
  • 1 egg, for egg wash
