Jicama and Pepper Stir-Fry
Ingredients
  • 1 tablespoon cooking oil
  • ½ medium onion, cut into wedges
  • 1 teaspoon grated fresh ginger
  • 1 clove garlic, minced
  • 2 medium green, yellow, and/or red sweet peppers, cut into thin strips (2 cups)
  • 8 ounces jicama, peeled and cut into 2x½-inch pieces (about 1-⅓ cups)
  • 2 tablespoons soy sauce
  • 1 ½ teaspoons sugar
  • 1 tablespoon lemon juice
  • 1 teaspoon toasted sesame oil (optional)
