Slow-Roasted Massaman Lamb Shoulder
Ingredients

  • 2 cups salt-reduced chicken stock
  • 195 g massaman curry paste
  • 1.5 kg lamb shoulder roast
  • 1 kg washed white baby potatoes, halved

  • 1 bunch radish, thinly sliced
  • 1 Lebanese cucumber, thinly sliced
  • ΒΌ cup blanched peanuts, toasted, roughly chopped
