Cheesy Broccoli Soup

Ingredients
  • 1 small yellow onion, chopped
  • 2 garlic cloves, minced
  • 1 celery rib, chopped
  • 6 cup veg broth
  • 6 c small broccoli florets
  • 1 c cannellini beans rinsed
  • ¾ c raw cashews soaked in hot water 30 min
  • ¼ in fresh tumeric, grated
  • ⅓ c nooch
  • 1 tbsp ACV
  • 1 tsp white miso
  • 1 tsp smoked paprika
  • ground black pepper
Steps
  1. Heat ¼ c water in a large pot over medium. Add the onion, garlic, celery cook 5 min. Add 2 c veg broth and bring to boi. Lower heat to low and simmer until the veg is tender.
  2. Transfer soup to blender and blend until smooth. Transfer back to pot and add remaining 4 c broth and bring to boil. Add broccoli and lower to simmer. Cook 3 to 4 min until broccoli is soft.
  3. In the blender, combine 2 tbsp water and the beans, cashews, turmeric, nooch, ACV, miso, paprika, pepper until smooth.
  4. Stir bean mixture into soup and heat until hot
