Cristins tortellini soup

Ingredients
  • 1 diced onion
  • 2 diced celery stalks
  • 2 tbsp olive oil
  • 8 minced garlic cloves
  • 1 box chicken stock
  • 2 cans diced tomatoes
  • 1 tbsp salt
  • ½ tsp pepper
  • 1 tbsp dried basil
  • 1 tsp dried oregano
  • 1tbsp onion powder
  • 1 tsp garlic powder
  • 1 pinch red pepper flakes
  • 2 to 3 cups fresh baby spinach
  • 3 cups frozen tortellini (about a pound)
  • 1 cup shredded parmesan
Steps
  1. Saute onions and celery for 10 mins in olive oil
  2. Add garlic, salt, pepper, red pepper flakes and saute for an additional minute or two
  3. Add chicken stock, then tomatoes, then the rest of dried spices
  4. Simmer 30 mins
  5. Add tortellini and spinach, cook 3 to 5 mins until tortellini is cooked
  6. Garnish with parmesan
